SOBAGIRI RAKUJYO - Soba Making Class byFood x GTJ Collaboration Experience

This summer, Giving Tuesday Japan's interns had the unique opportunity to participate in a byFood experience of their choosing. They decided to try the famous Sobagiri Rakujyo's Soba Making Class in Kappabashi, Tokyo!

What is Sobagiri?

Sobagiri is a technique that has been practiced since the Edo period and can be completed in just 30 minutes. The original smart hand technique is used, so your fingers and clothes don’t get dirty, and it’s a new sensation to stop by for a little while shopping!

The soba noodles we make at our shop are made with 100% buckwheat flour. No wheat flour is used.

SOBA Flavor

This is Rakujyo’s original and advanced system that allows you to make your own noodles and dine on them with the flavor of your choice.

Soba Making Class

Surrounded by a district known for kitchen tools and craftsmanship, you enter a compact open kitchen focused on one thing: 100 percent buckwheat Jyuwari soba made and enjoyed within minutes.

You begin by washing your hands and putting on an apron and gloves. The instructor shows each step, then guides you as you work the dough and use a traditional soba knife. The movements are calm and steady as the dough is cut into thin, even strands.

In just 30 minutes, your soba is ready and quickly handed to the staff for boiling. It is cooked briefly to retain its shape while developing a soft, earthy aroma. Served fresh and warm, it reflects the moment it was cut, with a distinct, lively texture.

This experience is all about timing. Jyuwari soba is at its best just minutes after it is made, when the aroma and flavor are strongest. Eating it right after cutting brings out a clear difference in taste that defines the whole session.

Our Experience

Here are some photos from our intern's experience to give you an idea of how the soba-making class works!

Note: This experience can accommodate various dietary needs, including vegan, vegetarian, and gluten-free. Please notify your host at the time of booking, as ingredient adjustments cannot be made on the day of the class.

There is also ramen noodle making as well! So please try both to your heart's content!
